With over 22 years of professional experience, Chef Lewis Vargas's passion for cooking began in his childhood, inspired by watching his grandmother and mother prepare daily meals. Their joy in cooking and the delight it brought to others fueled his dream to become a chef. At ten, Lewis knew his path, and after high school, he pursued culinary arts at Johnson & Wales University, earning a Bachelor's degree with top honors in 1994. His career began at renowned establishments like Robert de Niro's Tribeca Grill and the historic James Beard House, and he honed his skills at Gary Danko's Michelin Star restaurant in San Francisco.

Returning to New York, Lewis embraced fine dining and farm-to-table cuisine, working at esteemed locations such as Almond in Bridgehampton and Porto Vivo in Huntington. He cooked for celebrities like Madonna and Serena Williams, adding to his impressive resume. Collaborating with top chefs like John Doherty of the Waldorf Astoria and Massimo Fedozzi at Vero, Lewis earned critical acclaim, including three stars from the New York Times. His diverse experience and commitment to sustainability make him a versatile consultant chef, adept at offering exceptional menus and adhering to strict establishment guidelines.
